Happy Friday, guys! What better way to celebrate the weekend than with a brand new recipe – especially one as delicious as these Granola Bars?!?!
I have great memories regarding granola bars – one specifically being my Dad driving me to high school and stopping at the gas station along the way for breakfast lol. I would always get a chocolate chip granola bar and boy it was good. Soft, chewy, so delicious.
Of course, I do prefer these granola bars now – especially since they have about ¼ of the sugar content lol. So let me tell you what you’ll love about these!
Why You’ll Love These Bars:
First off, like I said above, they’re not overly sweet! I really prefer that. They have an incredible balance of sweet and saltiness – sweetness from the sweetened coconut and honey mixed with the saltiness from the roasted peanuts and creamy peanut butter. It’s the perfect match.
Speaking of perfect match, I love the texture of these bars SO much.
They have a crunch, but are also soft and chewy in the middle. They aren’t just bars full of oats – they have serious texture from the peanuts, the rice krispies which give them the best crispy POP of flavor and of course, the shredded coconut.
They’re also incredibly easy – seriously you just add mix all of the ingredients together, melt the peanut butter and honey – mix it all up, try not to eat it all in the bowl and add it to a pan. Place it in the freezer to let it set up and you’re all good!
My favorite part? Generously drizzling the bars with the melted chocolate! You just can’t beat peanut butter and chocolate together.
I also added a pinch of flaky sea salt on top for extra salty sweet goodness. Overall, they are *chef’s kiss* delicious! Let’s get into what you need to make them!
Ingredients You Need:
- Rolled oats
- Rice Krispies
- Creamy peanut butter
- Honey
- Roasted peanuts
- Shredded sweetened coconut
- Melted chocolate
Best Granola Bar Tips:
Alright – so this recipe is SO simple y’all. But here are a few tips I can give that will make the process a little bit easier.
First, add all of the dry ingredients to one bowl – this is the rolled oats, rice krispies, shredded coconut and chopped roasted peanuts. Mix together until they’re combined.
In a small bowl, add the creamy peanut butter and the honey and put in the microwave and melt them together. This should take anywhere from 30 seconds to a minute in the microwave – you want them to seamlessly mix together.
It should look something like THIS when you pour it into the dry ingredients.
Mix together until everything is evenly coated with the melted peanut butter honey mixture.
Next, spray an 8×8 pan with cooking spray. This will help ensure that your granola bars will not stick.
Add the granola mix into the pan and firmly push down. You might need to spray your hands with the cooking spray as well to make sure it doesn’t stick on you as you’re pressing it down into the pan!
And now, just pop it into the freezer for about 30 minutes to set up.
Once they’re all set, melt some chocolate in the microwave – I highly recommend adding a tsp of coconut oil with the chocolate to make it silky smooth and perfect for drizzling.
Slice the bars or go ahead and drizzle the chocolate and THEN slice the bars – it’s up to you!
Top with flaky sea salt, roasted peanuts or more shredded coconut. Enjoy every bite!
How to Store Bars:
I stored them in the exact same pan I made them in (since mine had a lid). However, if you don’t have that, I would store them in a tightly sealed tupperware container and keep them in the FRIDGE. This will make sure they stay set up and don’t crumble as much.
Store them for 3-4 days in the fridge.
Add in Ideas:
If you wanted to do a fun almond version – I would replace the peanuts with chopped almonds and do almond butter instead of peanut butter!
You could add chocolate chips into the mixture instead of drizzling chocolate on top.
No honey? Maple syrup would work fine as well.
For kiddos – mini m+m’s would be fun to add into this!

Chocolate Peanut Butter Granola Bars
These Chocolate Peanut Butter Granola Bars are just the BEST! Loaded with wholesome pantry friendly ingredients and generously drizzled with melted chocolate, you can’t go wrong with this snack idea!
Ingredients
- 3 cups rolled oats
- 1 cup Rice Krispies
- 1/2 cup creamy peanut butter
- 1/2 cup honey
- 1/4 cup chopped roasted peanuts
- 1/4 cup shredded sweetened coconut
- 1/3 cup chocolate chips, melted
Instructions

Add the oats, rice krispies, sweetened coconut and chopped roasted peanuts to a bowl. Mix together.

In a small bowl, melt together the honey and peanut butter until combined - about 30 seconds to 1 minute in the microwave.

Pour the melted peanut butter/honey mixture into the oat mixture. Stir until combined and each ingredient is coated.

Spray an 8x8 glass baking dish with cooking spray. Press the granola bar mixture evenly into the pan - you may need to spray your hands with cooking spray to do this properly (since the mixture is so sticky!)

Place in freezer for 30 minutes.

When the 30 minutes is up, melt chocolate. Slice the bars into however big or small you want them. Generously drizzle or dip them in the melted chocolate. Garnish with flaky sea salt, coconut flakes or roasted peanuts. Enjoy!

Store in tightly sealed tupperware container in fridge for up to 4 days.
