This Chocolate Drizzled Peanut Butter Nice Cream is out of this world amazing. So creamy, cool and refreshing – not to mention loaded with peanut butter and drizzled with tons of chocolate! It’s the perfect healthier treat!
Okay so question: Do you know what nice cream is? Is that like a super millennial food term at this point? If you don’t know, it’s basically just frozen bananas blended together to resemble a soft serve ice cream. It’s over the top creamy, super sweet and SO refreshing. It’s one of my favorite Summer treats.
Now, I will go out there and say that I am not against real ice cream. I love a good high quality ice cream that has real cream, milk and sugar in it. In fact, we have this local ice cream shop in our town that makes the most amazing homemade Oreo ice cream. It’s LOADED with chunks of cookie and I swear, I could probably eat it everyday of my life for dessert.
BUT since I ain’t got the money for that, I think I’ll have a big batch of this instead!
Let me tell you what’s in this delicious creamy goodness:
- frozen bananas
- peanut butter
- unsweetened vanilla almond milk
So that’s the main base of the recipe. SO SIMPLE, right?! However, I added just a few more things to my own batch to add some additional protein and chocolately goodness. I included…
- one single serve packet of Vital Proteins Collagen Peptides
- a homemade chocolate shell drizzle made with chocolate chips and coconut oil.
If you haven’t heard of Vital Proteins, do you even have an Instagram?! Haha, jk! But really, they are blowing up on Instagram and for good reason. They make an amazing grass fed collagen supplement that not only helps your hair, skin, bones and joints but also gives you a boost of protein! One single serving packet has 10 grams. Pretty awesome. It’s optional to add this, but I highly recommend it if you want to increase the amount of nutrients in this ice cream.
Did y’all ever have that bottled chocolate shell as a kid? You know the Hershey’s that would harden over your ice cream? I made you a 2 ingredient healthier version of that! Yes, only melting chocolate chips with a little bit of coconut oil will produce the most amazingly wholesome hardened chocolate drizzle shell on your ice cream. It was very reminiscent of those chocolate dipped soft serve cones I used to get at Dairy Queen when I was younger. It’s SERIOUSLY AMAZING.
So, here’s the scoop. (Pun somewhat intended.) You need to make sure that your bananas are ripe but not overly ripe. The riper they are, the sweeter your ice cream will be! Next, you need to cut them into thirds and freeze them. Once frozen, you simply add everything to a food processor or blender and blend until you get the desired consistency that you want. Note: you may add as little or as much almond milk as you want to make it less/more thick. I found that about 2-3 tablespoons worked well for me. It comes out as more of a soft serve type of consistency – not big hard scoops like you may receive at an ice cream shop.
After it’s all blended, I loaded up a waffle cone with it. Side note: is there really any other way to eat ice cream other than in a delightfully sweet and crunchy waffle cone?! I think not. After I loaded it with the nice cream, I took the melted chocolate and generously drizzled it all over. Then licked the spoon. Yup.

This Chocolate Drizzled Peanut Butter Nice Cream is out of this world amazing. So creamy, cool and refreshing - not to mention loaded with peanut butter and drizzled with tons of chocolate! It's the perfect healthier treat!
Ingredients
- 3-4 large bananas (frozen, cut into chunks)
- 2-3 tbsp unsweetened vanilla almond milk
- 1 tbsp peanut butter
- 1 packet Vital Proteins Collagen Peptides (optional)
- 2 waffle cones (for serving, optional)
Chocolate Shell
- 1/3 cup chocolate chips
- 1 tsp coconut oil
Instructions

Cut your bananas into chunks, and freeze. Once fully frozen, add them to a food processor or a blender. Begin to blend them, adding in your almond milk as you go to help thin it out. When it begins to get creamy, add in your peanut butter and collagen. Blend until it reaches desired consistency.

Melt the chocolate chips and coconut oil in segments, stirring each time you take it out of the microwave (mine took about two 30 second segments)

Add the nice cream to a waffle cone and drizzle the chocolate over top of the ice cream. Eat immediately! Enjoy.
