These Chocolate Drizzle Peanut Butter Cookies are the perfect easy, light Summer dessert! Soft, fluffy and delicious peanut butter flavor – you won’t be able to stop at just one!

It’s no secret that I love peanut butter. I find that in its true unadulterated form, it has the ability to transport me right back to my childhood. Stepping off the school bus at 3 PM, watching TRL on MTV and fixing myself a peanut butter and jelly sandwich on white bread. I would fill it to the point where the grape jelly would almost like seep through the bread, y’all know what I’m saying? Those were the good days.

So, it’s a given that I love peanut butter cookies as well! Why not combine one of my favorite food items with my favorite sweet?! There is nothing like one of these Chocolate Drizzle Peanut Butter Cookies warm out of the oven – they’re soft, fluffy, moist (sorry lol), and I love the intense peanut butter flavor throughout. And of course when you add chocolate drizzle it just takes it over the top. Chocolate + PB = one of the best combinations of all time.

These Chocolate Peanut Butter Cookies are also just perfect for Summer! They’re no fuss, require minimal ingredients and time and aren’t so heavy like a normal chocolate chip cookie.

So how do you make these, you ask?! Let’s get into it!

Ingredients You Need for Chocolate Drizzle Peanut Butter Cookies:

  • 1 cup Nutzo peanut pro smooth peanut butter
  • 1 egg
  • ½ cup light brown sugar
  • ½ tsp vanilla extract
  • ¼ tsp salt
  • 1/4 cup chocolate chips, melted

Only 6 ingredients?! YES PLEASE.

How to Make Chocolate Drizzle Peanut Butter Cookies:

If you’re in NC like I am and it’s miserably hot, turn down your AC to make your house cooler and then turn ON your oven. Ha! Preheat it to 350 and let it do its thang.

Add your egg and brown sugar into a large bowl and use a whisk to fully combine the two. To this bowl, add in your smooth peanut butter (Nuttzo Peanut Pro Smooth is my all time favorite!), vanilla and salt. Switch from the whisk to a wooden spoon and mix all of this until it’s combined fully.

Next, let the dough chill in the fridge for 20-25 minutes. While it’s chilling, prepare your baking sheet! Line with either a silicon mat or parchment paper.

Using a cookie scoop or a tablespoon, scoop about 1 tbsp worth of dough into your hands and gently roll it into a ball. Place it on the baking sheet. Repeat until the dough is used up.

Use the back of your spoon, gently press the cookies down to flatten them into a more “cookie” like shape like THIS:

Bake for 10-11 minutes (10 was perfect for me!) or until the edges are golden brown. Once done, let them sit on the pan cooling for about 5 minutes and then remove to a cooling rack. Be careful not to let them sit on the pan for TOO long or they will be super dry and cakey. No bueno!

Once on the cooling rack, melt chocolate chips in 30 second intervals, stirring each time until smooth. Drizzle chocolate generously or you could even go as far as to dip the cookies in the chocolate. Add a pinch of salt on top if desired. Enjoy while warm!

Store in tupperware in room temperature for up to 3 days (if they even last that long!)

Ingredients

  • 1 cup creamy peanut butter (preferably Nuttzo Peanut Pro Smooth)
  • 1 large egg
  • 1/2 cup light brown sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

    Haylie, you’re right, peanut butter and chocolate are one of the best combos ever! These look so chewy and delicious. The chocolate drizzle and sprinkle of salt make them irresistible! Your photos are gorgeous – they’re making me crave these cookies!

    I definitely wouldn’t stop at just one of these! Love pb too and paired with chocolate, it’s definitely one of the best combos! Love your suggestion of a pinch of salt on top…that salty/sweet combo gets me every time! I laughed out loud about these lasting 3 days! They’d disappear so so fast around me 😉 Happy Monday, Haylie!

    The one thing I learned about dessert recipes on this website so far are that I should always double the recipe because it will inevitably be so good, I eat it all in one sitting and don’t save any for later meals or for other people!

    Great recipe!! Found it on the NuttZo website. Being vegan, I replaced egg with Just Egg and added a teaspoon of molasses (blackstrap) to the light brown sugar. I also baked them for 15 minutes. They tasted like a peanut butter cup!!
