YOU GUYS! 2020! It’s officially here. I got weirdly emotional when the ball dropped and it turned midnight – how about you? So much has happened in the past decade. I graduated high school, college, traveled on a plane for the first time ever, got engaged, moved from my home for 22 years, found an amazing church, got married, quit my job to start this blog and now look at me!
Who even knows what the next decade will bring…I’m not sure. I hope lots of joy and GOOD FOOD. Speaking of, let’s talk about these Chipotle Lentil Burrito Bowls.
Why You Should Be Eating Lentils this Year:
Okay, so. Lentils are amazing. For those of you who may not know what lentils are, they are legumes. They’re so packed full of nutrients – especially protein and fiber! They are fairly caloric so you can bet they are super hearty and will keep you full for hours!
They are also completely plant based! Woo! That’s one of the main feedback I got from when I polled my IG followers on what they wanted to see more of this year….vegetarian options! So, here we are!
These Chipotle Lentil Burrito Bowls are SO delicious! They are packed with your favorite burrito bowl fillings like crunchy romaine lettuce, sour cream, juicy corn, salsa, avocado…the list goes on!
The lentils themselves are seasoned with taco spices and chipotle pepper, making them super smoky and flavorful.
I love the differences in texture in this bowl. You have the crunchy lettuce, tangy sour cream, spicy salsa, cooked lentils, juicy corn…it’s just SO yummy. I can’t wait to let you all in on how to make these! Let’s get to it!
Ingredients You Need for Chipotle Lentil Burrito Bowls:
- red split lentils
- burrito bowl toppings like: corn, avocado, jalapeno, red onion, lime, cilantro, sour cream, salsa etc.
- water (or vegetable broth!)
- spices like cumin, paprika, garlic powder, cayenne, salt and pepper
- chipotle in adobo sauce
How to Make Chipotle Lentil Burrito Bowls:
First, cook your lentils according to the package directions. Each package is most likely different but for me, that was heating a pot on medium heat, adding a tablespoon or so of olive oil. After it heated up, I added in my lentils and tossed them to coat for about 1 minute. Then I added in 2 cups of water (can also sub veggie broth for more flavor). Cover them with a lid and let them simmer for 12-14 minutes or so, stirring every once in a while.
Once the lentils are done, add in the spices and stir gently to combine. Taste and adjust seasoning if necessary aka if you like it spicier add in more spice! I also added in about 1 tbsp of the sauce from the can of chipotle pepper in adobo sauce. This gives the lentils that smoky taste I was telling you about earlier and adds so much flavor!
While the lentils are cooking, feel free to chop up your preferred burrito bowl toppings!
My favorites are as follows:
- my easy homemade salsa!
- greens (I love using crunchy romaine lettuce)
- diced avocado (or guacamole)
- crunchy red onion
- sour cream (for extra tangy goodness)
- juicy corn (use fresh or canned!)
- jalapeno (if you want it extra spicy)
- cilantro
- limes
Now it’s time for bowl assembly!
Layer the greens, top with the lentils as well as the other toppings and eat up! These Chipotle Lentil Burrito Bowls are so super simple and the perfect option for meal prepping as well (especially since you can eat the lentils cold!)

Chipotle Lentil Burrito Bowls
These Chipotle Lentil Burrito Bowls are the perfect way to kick off 2020! Loaded with spicy taco seasoned red lentils and packed with your favorite burrito bowl toppings, this is the best and easiest meal - even to meal prep!
Ingredients
- 1 cup split red lentils
- 2 cups water (or sub vegetable broth)
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- salt and pepper to taste
- 1 tsp chipotle pepper in adobo sauce
- burrito bowl toppings like: romaine lettuce, red onion, jalapeno, avocado, sour cream, salsa, corn etc.
- 1 tbsp olive oil
Instructions

Cook your lentils according to the package directions. For me, that was heating a pot on medium heat, adding a tablespoon or so of olive oil. After it heated up, add in lentils and toss to coat for about 1 minute.

While the lentils are cooking, prep your burrito bowl toppings. This can include dicing red onion, jalapeno, romaine lettuce, avocado, prepping salsa etc.

Once the lentils are done, add in the spices and stir gently to combine. Taste and adjust seasoning if necessary. Add in 1 tbsp "sauce" from the chipotle in adobo can for smoky flavor.

Time to assemble the bowls! Layer the greens, top with the lentils as well as the other burrito bowl toppings and eat up! Enjoy!
Recipe Notes
Your burrito bowl toppings can vary - mine were as followed: romaine lettuce, sour cream, salsa, red onion, diced avocado, juicy corn, jalapeno and lime. So yummy!
