These Chimichurri Chicken Burgers are the ultimate fun and bright Summer recipe! They’re loaded with freshly made chimichurri sauce and are SO fresh and delicious.
It’s almost Summer! Which means that it’s officially cook out season? If so, and you aren’t super jazzed about the basic burgers or hot dogs you might have at a cookout, this recipe is just the right one for you!
Or….if you’re reading this and it’s way past MDW, this is the ultimate EASY weeknight dinner OR simple meal prep meal for lunches during the week.
I’m obsessed with these chicken burgers! Let me tell you why!
Why You’ll Love These Burgers:
First off, these are SO simple. Seriously, you just need a few ingredients to whip up the chimichurri sauce and then you combine the sauce with ground chicken and hello yummy burgers!
I feel like ground chicken is SUCH an underrated protein to use. It’s quite inexpensive in relation to other chicken you can buy at the store, it’s loaded with protein and it’s lean!
A lot of chicken burgers you find will need egg or bread crumbs to help them stay together. These don’t! Easy peasy!
I absolutely love the fresh and vibrant flavor of these burgers, they’re just SO dang good. The fresh herbs in the chimichurri sauce, the toasted bun, the melty pepper jack cheese….YES PLEASE.
Alright, so let’s get into what you need to make these!
Ingredients You Need:
Ground Chicken – you can find this normally at any basic grocery store!
Chimichurri Sauce (fresh parsley, cilantro, olive oil, salt, red pepper flakes, fresh garlic, oregano, lemon) – I highly recommend you make your own chimichurri for this recipe!
Salt – I use kosher salt for this recipe.
Buns – I recommend brioche buns for this recipe, they’re ultra buttery and delicious!
Avocado Oil – for the pan you fry the burgers in…you can also use olive oil if needed.
Cheese – I used pre-sliced cheese for this recipe and I used pepper jack, however, you can use whichever cheese you prefer!
Burger Toppings – I like using tomatoes for this recipe!
How To Make Burgers in 5 Simple Steps:
- Begin by making the chimichurri sauce! Roughly chop the garlic cloves and fresh herbs. To a food processor, add in the herbs and garlic, juice of one lemon, salt and red pepper flakes. Pulse these ingredients until they’re combined. Next, add in the olive oil a little bit at a time until it’s all blended together. Taste and adjust seasoning if needed (add more salt etc.)
- To a large bowl, add in the ground chicken along with about ¼ cup of chimichurri sauce and salt. Mix with your hands until it’s fully combined and form 4 burger patties.
- Heat a skillet on medium heat and add oil. Once the oil is hot, add the burger patties. Cook for 4-5 minutes on each side or until the chicken burger is cooked fully internally. Once cooked, add on the cheese slice and let it melt. Remove from the pan.
- If desired, add butter to your buns and toast them in the same pan. Use the rest of the chimichurri sauce and add to each burger bun. Add additional burger toppings if desired. Serve with french fries or chips!
- Eat while hot and enjoy!
Best Burger Making Tips:
Be sure that your skillet is WELL oiled and HOT when you add in the chicken burgers.
This recipe calls for 1 pound of ground chicken – be sure to make 4 burgers that are similar size.
Use a meat thermometer to be sure that the burgers are cooked internally! 165 degrees F is the safe internal temperature for cooking ground chicken.
The chimichurri recipe makes about a HEAPING 1/2 cup. Use 1/4 cup for the burger mixture and then use the additional sauce to top the burgers. If you worry that you won’t have enough, double the chimichurri sauce recipe 🙂
Be sure to have all of your toppings already prepared by the time your burgers are done, that way you can just quickly assemble the burger….because obviously, these burgers are best HOT!
Storing Leftovers:
These store really well! Simply add the cooked chicken burgers to a tightly sealed container and store in the refrigerator for up to 2-3 days.
When ready to heat up, just heat until desired temperature is reached. Enjoy!

Chimichurri Chicken Burgers
These Chimichurri Chicken Burgers are the ultimate fun and bright Summer recipe! They’re loaded with freshly made chimichurri sauce and are SO fresh and delicious.
Ingredients
- 1 lb ground chicken
- 1 tsp kosher salt
- 1 tbsp avocado (or olive oil)
- 4 brioche buns
- burger toppings (tomato, onion etc.)
- 4 slices cheese of choice (I used pepper jack!)
Chimichurri Sauce
- 1/2 cup fresh chopped parsley
- 1/4 cup chopped cilantro
- 4 cloves minced garlic
- 1/2 tsp dried oregano
- 1/4 tsp red pepper flakes (add more if you want it spicier!)
- 1/2 lemon, squeezed
- 1/4 cup olive oil
- salt to taste
Instructions
Making Chimichurri Sauce

Begin making the chimichurri sauce an hour in advance in order to let the flavors meld together. Mince 4 cloves of garlic. Roughly chop both parsley and cilantro.

In a food processor or a blender, add the garlic and herbs. In addition, add oregano, red pepper flakes and a large pinch of salt. Squeeze in half of a lemon as well. Pulse these ingredients together until combined. Then, slowly, a bit at a time, add in the olive oil until it’s mixed together. Set it aside to let the flavors combine together. Add salt to taste.

This will make about 1/2 heaping cup of chimichurri sauce!

Go ahead and slice your burger toppings you would like!
Making Burgers

To a large bowl, add the ground chicken along with 1/4 cup of the chimichurri sauce and 1 tsp of salt. Mix together with your hands and then form 4 equal sized patties.

Heat a large skillet on medium high heat with 1-2 tbsp of oil. Let it get hot and then add in the burgers. Cook for 4-5 minutes on each side, or until internally cooked through.

Once done, turn off the heat and then add the sliced cheese. Top with a lid and let the cheese melt. Remove to a plate and keep warm.
Assemble Burgers

If desired, toast your buns in the same pan that you cooked the chicken burgers in. Use the remaining 1/4 cup of the chimichurri sauce and add on the buns.

Add the chicken burger and then your favorite toppings. Serve with french fries or chips! Eat while hot and enjoy!
