Hello, Fall. Officially! Today I turned off our AC and opened the windows and if that doesn’t signify Fall is here, I don’t know what does!
Okay, well, full disclosure: it is still about 85 degrees where I live.
And there are a couple of things that more signify Fall to me. Like this Chai Spiced Coffee Cake. Or these Cinnamon Apple Spice Muffins aaaaand last but certainly not least, this Chicken Pot Pie with Cheesy Everything Bagel Spice Biscuits!
Why You’ll Love This Dish:
Okay, y’all, this dish is not your standard Chicken Pot Pie. It is not made with a pie crust – but instead topped with easy + cheesy drop biscuits!
However, the filling is similar to the pot pie flavor that you know and love. It’s extremely rich and delicious because I not only mixed in chicken broth, whole milk BUT I made sure and added a touch of heavy cream for extra goodness. Y’all know how I love my heavy cream!
So you mix that delicious butter with fresh veggies like onion, garlic and then you make that delicious thick gravy by combining the broth, milk and cream.
To this mixture you add the classic frozen mixed vegetables like peas, carrots + corn. Next you add in the super juicy tender shredded chicken.
I feel like honestly you could just stop right there and eat that deliciousness BUT you would be doing a major injustice to yourself.
Because y’all, these Cheesy Everything Bagel Biscuits. I’m SHOOK over them.
They aren’t your normal “drop” biscuits. They are loaded with shredded cheddar cheese, lots of the super yum everything bagel spice and they bake up to be so fluffy, light and delicious!
They make the perfect companion to the creamy chicken pie mixture. All combined, it’s melt in your mouth, creamy comfort food at its best. So let’s get into how to make it!
Ingredients You Need:
- shredded chicken
- fresh onion + garlic
- all purpose flour
- chicken broth
- whole milk
- heavy cream
- salted butter
- baking powder
- shredded cheddar cheese
- everything bagel spice
- frozen mixed vegetables
- salt, pepper, garlic powder, fresh oregano
Tips to Make the BEST Chicken Pot Pie:
Begin by preheating the oven! You actually bake this dish twice – once you heat up the filling and then you bake the biscuits on top later. So, it’s important that it’s hot and ready to go!
NOTE: For this recipe, I used a large, oven safe, 9 inch cast iron skillet. You can also use a casserole dish or a dutch oven, just be sure that it’s not overly big.
Dice your onion and garlic. Set aside. Melt the salted butter in the cast iron skillet on medium heat. Once the butter is melted, add the onion and a large pinch of salt and pepper. Cook those up for a few minutes – see full instructions in the recipe card.
To this, add the all purpose flour and stir around, letting it cook and absorb into the onions. Cook for about 1 minute.
Gradually whisk in the chicken broth a little bit at a time. Next, whisk in the whole milk the same way. Lastly, add in the heavy cream. Whisk continually on low to medium heat for up to 5 minutes or until the mixture thickens.
The heat should still be about medium – never let it get to a boil!
Once thickened, add the frozen vegetables. Cook these for 2 minutes in the mixture. Lastly, add in the shredded chicken. I used a rotisserie chicken for ease but feel free to use whatever cooked chicken you’d like!
Add in salt and pepper and season with your heart. Taste the mixture and adjust seasonings if needed! (I personally LOVE salt so I added just a hint more!).
Now – if you’re using anything OTHER than a cast iron skillet – at this point, you will need to transfer the chicken filling to a greased casserole dish. Otherwise, you can skip this step.
Place the chicken filling in the skillet INSIDE of the oven to bake for 15 minutes. You can use this time to make the biscuit dough.
In a mixing bowl, mix the dry ingredients. TO this, add melted butter and milk. Mix together. Lastly, add the shredded cheese and mix.
It might be a little sticky – if so, you can add a hint more flour. But these are supposed to be more like “drop” biscuits so give them a little grace! 😉
Once the 15 minutes of baking time is up, carefully remove the skillet.
For the next step, I used a ¼ cup measuring cup to help measure out the biscuits.
Instead of just “dropping” them on the filling, I rolled mine into a ball in my head, slightly flattened them out to make them more “biscuit looking” and gently placed them on top of the chicken filling.
Once you use up all of your biscuit dough, place the chicken and biscuit skillet BACK into the oven.
Bake for another 15-20 minutes or until the biscuits are fully cooked through. As usual, I placed mine on broil for about 2-3 minutes to get the golden brown color on top. Make sure and watch it though so you don’t burn it!
Once the time is up, remove from the oven and let it cool. Finally, serve it up! Garnish with extra everything but the bagel seasoning, fresh oregano or more melted butter on top of the biscuits!
How to Store Leftovers:
I simply took the leftovers and then put them in a large tupperware to store in the fridge. To warm back up, simply put it in the microwave to warm it up. As with most leftovers, the flavor is even better the next day!

This Chicken Pot Pie with Cheesy Everything Bagel Spice Biscuits is the ultimate Fall comfort food! Loaded with a delicious creamy chicken base with mixed vegetables and topped with fluffy, melt in your mouth everything bagel spiced drop biscuits!
Ingredients
Chicken Pot Pie Filling
- 2 cups shredded and cooked chicken breast (see notes for suggestions)
- 1 medium yellow onion, chopped
- 4 cloves garlic, minced
- 4 tbsp butter
- 1/3 cup all purpose flour
- 2 cups chicken broth
- 1 cup whole milk
- 1/2 cup heavy cream
- 12 oz. bag of mixed frozen vegetables
- 1/2 tsp salt
- 1/2 tsp dried oregano
- 1/2 tsp pepper
Everything Bagel Spiced Biscuits
- 2 cups all purpose flour
- 1 tbsp baking powder
- 1 tbsp everything bagel spice
- 1/2 cup shredded sharp cheddar cheese
- 1/2 cup melted salted butter
- 1 cup whole milk
- optional garnishes: more melted butter, everything bagel spice and fresh oregano
Instructions

Preheat oven to 400 degrees.

Dice onion and garlic. Set aside. Melt 4 tbsp of salted butter in a large cast iron skillet (that's oven safe!), mine is a 9 inch skillet, on medium heat. Place the chicken pot pie filling in the oven and bake for 15 minutes. Meanwhile, make the biscuit dough.

In a mixing bowl, mix all purpose flour, baking powder and everything but the bagel spice. TO this, add melted butter and milk. Mix together. Lastly, add the shredded cheese and mix.

When the 15 minute baking time is up, remove the chicken pot pie carefully.

Using a 1/4 measuring cup, measure out the biscuits and roll out the dough in your hands and then gently press them in your hand to make them look more like "biscuits". Place the biscuits directly on the chicken pot pie. Repeat until the dough is gone.

Place the chicken and biscuit skillet BACK into the oven. Bake for another 15-20 minutes or until the biscuits are fully cooked through. You might want to place a baking sheet or foil underneath just in case it drips out.

If desired, once done baking, place on broil for 1-2 minutes to achieve the golden brown biscuit tops! Just make sure and keep an eye on them so they don't burn!

Once it's done cooking, remove and let it cool for about 3-5 minutes. Finally, serve it up! Garnish with extra everything but the bagel seasoning, fresh oregano or more melted butter on top of the biscuits! Enjoy!
Recipe Notes
For ease: Use a rotisserie chicken for this recipe! You can also bake 2 chicken breasts at 350 degrees for 35-40 minutes or until done. Season with salt and pepper and then shred.

So. Good. 😍 The everything bagel seasoning adds so much! The casserole dish I used was just barely too small, so it overflowed a bit – I just might have to invest in a cast iron pan, because I know I’ll be making this again.
Made this tonight. Delicious. I sautéed carrots, chopped potatoes and mushrooms after the wine and garlic. Added the flour. Instead of 2 cups of broth, used 1 c.white wine, 1 c. broth. Seasonings I used, rosemary, oregano, basil. Shredded Jalapeno Colby Jack and pepper Jack instead of cheddar. So yum! The photo helped and mine came out pretty darn close. Hubby approved.
