These Cheesy Roasted Red Pepper Flatbreads are just the best! Made with store-bought Naan bread, they’re simple and delicious!
Making pizzas on naan bread was one of the first ways that I ever made homemade pizza for myself. Me and one of my friends from school would load it up with sauce, all of our favorite toppings and of course – CHEESE.
This isn’t exactly the same considering that it doesn’t have the classic red sauce but it’s still delicious and the perfect easy weeknight dinner or appetizer to hold you over until dinner!
Why You’re Going to Love These Flatbreads
Okay, so, where to begin?
First of all, as most of my recipes have been lately, they’re insanely simple. They only require a few ingredients and you can absolute substitute for ingredients that you may not have.
I love the combination of the mellow mozzarella with the smoky roasted red peppers – they truly balance each other out in the best way!
I also love how these flatbreads aren’t overloaded with ingredients. I’m all for a TON of toppings but sometimes it seems like too much, you know? These are simple but seriously pack a flavor punch.
Speaking of more flavor – don’t hate me too much, but there is a large handful of chopped spinach on this flatbread. Yes, spinach.
I love eating greens on this because 1) they really shrink down while you’re cooking the flatbread and 2) they add a nice crisp crunch to each bite.
Plus, the spinach in this cancels out the extra cheese, right? Right! It’s scientifically proven 😉
Oh, and speaking of greens, the fresh basil on top is dynamite! It helps bring all of the delicious flavors together and gives a pop of freshness that is totally needed.
Like with most flatbreads, a crispy crust totally needs a sauce to go with it. I of course paired it with my beloved homemade ranch. However, a delicious balsamic glaze would go amazing with this!
It’s crunchy, cheesy, flavorful and the perfect meal for any day of the week! Let’s get into what’s needed.
- Store-bought Naan bread (or you can use a store-bought flatbread)
- Mozzarella cheese
- Jarred roasted red peppers
- Spinach (or any greens you have work)
- Basil (fresh or dried is okay – although I prefer fresh if possible!)
- Fresh garlic
Best Tips for Making These:
Don’t overcook the naan! Naan can easily go from delightfully crisp to HELLO BURNT very quickly. Make sure to keep an eye on it and that it doesn’t burn!
For me, assembly looked something like this:
Make the garlic butter by mincing up 2-3 cloves of garlic. Melt salted butter in a microwave safe bowl and then add in the garlic. Mix together.
Generously spread that on top of your naan bread and let it bake for 1-2 minutes in the oven directly on the rack.
Next, remove and place the flatbread on a sheet pan. Generously sprinkle chopped spinach on top followed by the sliced jarred roasted red peppers.
Add the cheese on top and let it bake! Until the cheese is melty and bubbly.
Make sure to garnish with either fresh herbs, shredded parmesan or some type of sauce or dressing! Or all three 😉

Cheesy Roasted Red Pepper Flatbread
These Cheesy Roasted Red Pepper Flatbreads are just the best! Made with store-bought Naan bread, they're simple and delicious!
- 2 pieces plain naan (or flatbread)
- 1/2 cup jarred roasted red peppers, sliced into long thin strips
- 2 cups mozzarella cheese
- 1 cup fresh spinach, diced
- fresh basil, red pepper flakes, parmesan for toppings
- 2 tbsp melted butter
- 4 cloves minced garlic
Preheat the oven to 400.
Mince the garlic. Slice the roasted red pepper into long thin strips and then dice the spinach.
Melt the butter in a microwave safe bowl and then add in the garlic. Brush the garlic butter on top of the fresh naan.
Place the naan directly on the oven rack for 2 minutes to bake and then remove.
Place the naan pieces on a sheet pan. Add 1/2 cup of cheese to each one, followed by the spinach, and sliced roasted red pepper. Top with another 1/2 cup of cheese.
Bake for 8-10 minutes or until the cheese is bubbly and melted. Garnish with fresh basil, parmesan and/or red pepper flakes!
Keep an eye on the naan so the edges don't burn as it's baking!
For each flatbread, you use 1 cup of cheese overall.
