Champagne Moscow Mule

This Champagne Moscow Mule is a fun twist on a classic cocktail! With a generous pour of bubbly champagne to top – it’s the best drink to ring in the New Year! 

Alright, y’all, I had to squeeze in one last recipe before Christmas and why not let it be a cocktail recipe?!

I love this recipe you guys. It’s SO simple and extra fun (Hello champagne!)

You can drink it on Christmas Eve, Christmas evening or whip one up to watch the ball drop on New Year’s! 

Why This Recipe is the BEST: 

I feel like Moscow Mules were one of the first cocktails that I ever drank and truly fell in love with. If you know me, you know that I’m more of a dry red wine type of gal but this one stole my heart! 

It’s made with just one type of liquor, vodka! – you guys know from my recipes like my Cranberry Orange Bourbon Fizz or my Simple Lemon Lime Margaritas that I always like to keep my mixed drinks simple and try to stick with one liquor only! 

It’s mixed with a generous squeeze of fresh lime which gives it a nice citrus kick and of course the best – GINGER BEER! I love ginger beer so much. It’s my go-to cocktail mixer. I love the spiciness that it adds to the drink. 

Side note: my favorite Ginger Beer to buy is the Trader Joe’s brand – it’s so affordable and it has extra gingery goodness in it! 

And you could just stop there with the ginger beer…but let’s end the year 2020 with a bang and add in a generous pour of fresh bubbly champagne!

The champagne gives it SUCH a fun twist – it truly makes this drink shine!

The extra carbonation just adds such a lovely taste and it makes it extra festive – especially if you’re drinking it while celebrating the New Year! (Because let’s be honest, i think we are all ready for the New Year!) 

So let’s get into what you need to make it and how – spoiler, it’s so simple! 

Ingredients You Need: 

  • Vodka 
  • Ice 
  • Ginger beer 
  • Fresh lime 
  • Champagne 
  • Fresh mint (if desired) 

How to Make this Drink: 

No crazy cocktail shakers required – this drink is easy, breezy and so delicious! 

In your favorite copper mug (or just a normal cocktail glass!), add in the ice. 

Add in the vodka (I did around 2 oz). 

And then top with 3-4 oz of spicy ginger beer!

Next, top it off with that freshly popped champagne! This is completely up to your preference – you can put as much or as little as you’d like in there. I put a generous pour for extra fun! 

Lastly, garnish with a fresh squeeze of lime, a lime wedge and if you’re feeling extra fancy, some fresh mint! 

Or, if you’re like us and your mint plant is invasive and won’t ever go away – go outside, pick a sprig and you’re ready for a cozy drink!

Ingredients

  • 2 oz vodka
  • 3-4 oz ginger beer
  • 1/2 lime, squeezed
  • champagne to top
  • fresh mint/lime to garnish

Instructions

  1. To a copper mug (or your favorite cocktail glass), add ice. Add in the vodka, top with the ginger beer and then top with the champagne! Squeeze with lime and then garnish with mint. Enjoy!
