Happy Mother’s Day weekend to all of the amazing and wonderful mamas out there! This particular recipe is SO delicious and perfect for a brunch, dessert or breakfast in bed!
Because let’s be honest, I think moms probably deserve breakfast in bed EVERYDAY. So on their one celebrated day of the year, let’s go all out and make homemade baked goods!
Why You’ll Love This Coffee Cake:
Oh my! Where to begin! First, two words: BROWN BUTTER.
If you’re not familiar with brown butter, it’s basically where you melt a stick of butter over low heat until it gets “browned” but not burnt of course. It becomes foamy and delicious has an incredibly nutty flavor that adds an amazing taste to this treat.
Next, anytime you combine brown sugar with butter and flour and cinnamon…you know you’re going to get something super delicious, right?! Right!
Well, this coffee cake has A LOT of the ingredients mentioned above.
It is perfectly sweet and loaded with brown sugar and cinnamon swirls. I love the different textures too! The crunchy topping but then the inside is soft and fluffy and the perfect bite of cake in my opinion! Also, yes, yes there are gooey swirls of brown sugar within the cake. YUM.
And truly what’s coffee cake without a delightful glaze?! This vanilla glaze is the perfect topping for this cake – especially when generously drizzled!
I love pairing this with a black cup of coffee to help balance out the sweetness or a cup of Earl Grey tea.
So…let’s get into what you need to make it! Spoiler alert – it’s mostly all pantry ingredients!
Ingredients You Need:
- All purpose flour
- Baking powder
- Cinnamon
- Butter
- Eggs
- Whole Milk
- Vanilla Extract
- Brown sugar
- Granulated sugar
- Powdered Sugar
Best Baking Tips:
I would begin this time by making the brown butter! This will ensure you give it proper time to cool down a bit and that way you won’t have your oven on that entire time.
If you aren’t sure how to make brown butter, no worries because it’s SO easy!
You literally just put a stick of butter in a skillet on medium heat and let it melt down. Stir it occasionally, making sure it doesn’t burn. After 7-8 minutes it will be very foamy at the top and you will know it’s done. Pour it into a large bowl and let it cool for several minutes.
In the meantime, NOW you can preheat the oven and get your 9×9 baking pan ready. I sprayed mine with cooking spray!
Next, add granulated sugar to the bowl with the brown butter. Using a hand mixer, mix to combine the sugar and brown butter for about 30 seconds.
Next, add in the eggs one at a time, making sure they’re fully combined. Add in vanilla extract + milk last and your wet ingredients are done!
In a smaller bowl, whisk together the dry ingredients until combined.
Add the dry ingredients directly to the bowl of wet ingredients and mix with a wooden spoon to combine.
This next part is completely optional but I really enjoyed doing it – add half of the batter to the bottom of the greased pan and then mix together in a small bowl brown sugar + cinnamon to create a delicious cinnamon swirl!
Generously coat the batter in the pan with this mixture and then GENTLY add the other half of the batter on top of the brown sugar and cinnamon mixture. It’s okay if it gets mixed together a little bit!
Lastly, quickly stir together the buttery brown sugar topping for the TOP of the cake. I told y’all, this cake is decadent!
It should look like this when you put the cinnamon swirl in, when you add the topping and after baking:
And now, I would let it cool!
Once it has cooled, make that delicious glaze! Generously drizzle it all over the cake and slice a thick piece and DIG IN.
How to Store Leftovers:
Store in a tightly sealed container at room temperature for up to 2 days. Warm up leftovers for 20-30 seconds in the microwave.

Brown Butter Cinnamon Coffee Cake
These Brown Butter Cinnamon Coffee Cake is loaded with a cinnamon swirl, brown butter and a brown sugar streusel! Perfect for brunch, dessert and especially with a cup of coffee!
Ingredients
Dry Ingredients
- 1.5 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 3/4 cup granulated sugar
Wet Ingredients
- 1 stick (1/2 cup) BROWNED BUTTER, cooled
- 2 large eggs
- 1/2 cup whole milk
- 1 tsp vanilla extract
Coffee Cake Topping
- 1/2 cup all purpose flour
- 1/3 cup light brown sugar
- 1/3 cup turbinado sugar
- 1/2 cup melted salted butter (1 stick)
- 1/2 tsp cinnamon
Brown Sugar Cinnamon Swirl
- 1/3 cup brown sugar
- 1/2 tsp cinnamon
Vanilla Glaze
- 1/3 cup powdered sugar
- 1-2 tbsp milk (more if you want the glaze thinner, less if you want it thicker)
- 1/4 tsp cinnamon
- 1/4 tsp vanilla extract
Instructions

Add 1 stick of butter to pan on medium low heat and let melt and cook down until browned and the top is foamy, about 7-8 minutes. STIR CONTINUALLY to make sure it doesn't burn.

Once the butter is browned, add to a large bowl and let cool down for about 5 minutes. In the meantime, preheat oven to 350.

To the bowl with the butter, add in the granulated sugar. Mix to combine with hand mixer for 30 seconds. Next, add in eggs one at a time. Add in milk and vanilla extract and mix to combine.

To a smaller bowl, add the dry ingredients which includes the flour, baking powder and cinnamon and whisk together. Add this to the bowl with the wet ingredients. Stir to combine with a wooden spoon, making sure it’s fully mixed together.

Spray a 9x9 baking pan with cooking spray. In the bowl you mixed the dry ingredients in, mix together the brown sugar cinnamon swirl.

Add half of the cake batter to the pan and spread out evenly. Generously sprinkle the brown sugar cinnamon on top of the bottom half of coffee cake. Then top with the other half and gently spread out. It's okay if it mixes in a little bit.

Lastly, to the bowl you just had the brown sugar cinnamon in, melt one stick of butter. To that, add in the flour, brown sugar, turbinado sugar and cinnamon. Mix together and add to the the top of the batter. Use a butter knife to gently swirl it in.

Bake for 38-40 minutes or until a toothpick comes clean. Let cool COMPLETELY.

Once it's cooled, whisk together the powdered sugar, milk and vanilla extract to make the glaze. Make it as thick or thin as you'd like it! Generously drizzle it over top of the coffee cake.
